Preheat the oven to 375 ºF.
For the crust, beat the vegan butter, granulated sugar, brown sugar, and vanilla in a stand mixer for 2 minutes until light and creamy.
Sift together the flour and salt. With the mixer on low, slowly add to the butter-sugar mixture until combined.
Scatter two-thirds of the dough into a baking pan, pressing lightly on the bottom and sides. Refrigerate for 20 minutes.
Bake the crust for 18 to 20 minutes until golden brown. Set aside to cool.
For the filling, combine the apples, pears, and lemon juice in a large bowl.
Add the granulated sugar, cinnamon, and nutmeg, then mix well.
Melt the butter in a large pot, add the apple and pear mixture, and simmer for 12 to 15 minutes until tender.
Spread the fruit mixture evenly over the crust, leaving a 1/2-inch border.
Crumble the remaining dough over the top of the apples and pears.
Bake for 25 to 30 minutes until the topping is browned.
 Cool completely, cut, and serve.
