A Caribbean classic turned vegan with young jackfruit, red onion, bell peppers, garlic, and various spices. This simple and delicious meal is versatile and can be served with rice.
In a food processor, blend the garlic, scallion, green bell pepper, and white onion.
Pour over the drained and rinsed jackfruit and let marinate for at least 20 mins.
In a large pot, heat a little oil on medium and add the marinated jackfruit to sear for 8-10 mins.
Meanwhile, chop the red onion and red bell pepper.
Once seared, add the chopped pepper and onion to the pot.
Push the mixture to the side of the pan and add the brown sugar, allowing it to melt down until it just starts to smoke.
 Sauté everything together.
Add the salt, pepper, thyme, allspice, and browning sauce. Season to taste.
Add enough veggie stock to cover the jackfruit and simmer for 5-10 mins.
 Serve over rice and enjoy.
