Brown Stew Jackfruit Sub

1: In a food processor blend the cloves of garlic, scallion, green bell pepper, and white onion.

2: Pour over your drained and rinsed jackfruit and let marinate for at least 20 mins.

3: In a large pot, heat on medium with a little oil and add the marinated jackfruit to sear for 8-10 mins.

4: Add salt, pepper, thyme, allspice, and browning sauce.

5: Cover with veggie stock and let simmer until slightly thickened.

6: Roast garlic in the oven for at least 30 mins.

7: Add roasted garlic to vegan mayo with rosemary, mix to combine.

8: Assemble the sandwich with arugula, sriracha jalapeños, and enjoy.
