Cheesy Crusted Chickpea Tofu (Soy Free)
25 mins prepServes 4
A delicious and healthy plant-based, soy-free tofu alternative made from chickpea flour, seasoned and air-fried or roasted until crispy, then tossed in a cheesy nutritional yeast coating.
First, for the tofu mix: Add chickpea flour, the first set of salt, pepper, garlic powder, ginger powder, and onion powder, along with water, to a wide pan. Whisk until the mixture is smooth. Then, cook down on medium heat, consistently stirring until it thickens and all the water is absorbed. Transfer the thickened mixture to a heat-proof container, let it cool for 30 minutes, then refrigerate for at least 3 hours or overnight to allow it to set completely. Once set, chop your chickpea tofu into desired cubes. Coat the cubes with a little oil and the second set of seasonings (salt, pepper, garlic powder, ginger powder, onion powder) along with the arrowroot starch. Air fry or roast the coated tofu at 400ºF (200ºC) for 20-25 minutes, or until the desired crispiness is reached. Let the cooked tofu cool for 5-10 minutes. Lastly, toss the warm tofu with the “cheesy” seasoning (nutritional yeast, dried dill, dried parsley). Serve and enjoy!
